Tasting notes
Extra-Brut Passion Blanc de Blancs is a Champagne with a deep yellow hue and subtle green highlights. Numerous fine, dynamic, and persistent streams of bubbles reveal a lively and refined effervescence. The initial nose is delicate yet expressive, marked by floral aromas reminiscent of white blossoms and acacia. It quickly evolves with hints of anise and a refreshing menthol note, evoking peppermint. As the wine opens up, the bouquet becomes more indulgent with notes of orange peel and candied zest. On the palate, the attack is broad and generous, balanced by a perfect tension. The aromatic profile echoes the richness of the nose, with notes of syrupy peach and ripe plantain, followed by a vibrant mid-palate of candied lemon and pomelo that brings both freshness and structure. The finish is saline, precise, and beautifully persistent, extending the tasting experience with elegance.
Blending and Maturing
The distinctive character of Extra-Brut Passion lies in its winemaking process. To enhance its complexity and structure, 51% of the blend consists of wines aged in oak barrels, which do not undergo malolactic fermentation. The remaining 49% comes from the wines of the current year’s harvest. To preserve the wine’s freshness and limit contact with the lees during aging, it is matured ‘sur pointe’ in the Champagne House’s cellars.
