I certify that I am of legal ageFor over 90 years, the family’s heirs have consolidated the founding values of the House, centred on traditional and ancestral know-how, refinement and French elegance. This work, begun by the founding Ployez-Jacquemart couple in 1930, was continued from 1950 to 2000 by Gérard and his wife Claude, and since 1988 by Laurence Ployez, the founder’s granddaughter and current Cellar Master. These three generations have succeeded in perpetuating the “artisanal” spirit of the Ployez-Jacquemart House.
Laurence Ployez was born in 1963, the eldest daughter of Gérard and Claude and granddaughter of the founders of the Ployez-Jacquemart Champagne House. Today, she is responsible for the vinification and commercialisation of the House’s champagnes. Laurence Ployez is the current Cellar Master at Champagne Ployez-Jacquemart, and the guardian of a unique Champagne expertise. Trained since 1988 by her father, Gérard Ployez, she has rigorously managed the winemaking and promotion of Champagnes Ployez-Jacquemart, working alongside Christophe Prieux since 2004.
Laurence studied Applied Biology in the field of Agronomy, then looked for her way elsewhere before returning to the champagne estate. She went to Canada, to Vancouver, to learn to speak English fluently. Her grandmother, Yvonne Jacquemart, was an excellent cook, and Laurence’s first passion was for the culinary professions she began her career working in the restaurant in renowned gastronomic establishments. This link between the House of Ployez-Jacquemart and gastronomy remains very strong today, as the Champagne is produced with a genuine desire to accompany the most refined dishes. Champagne Ployez-Jacquemart is above all a great wine for the table.
“Wine should be a treat, with a strong gastronomic side. For the taste, like a preparation in the kitchen. For me, vats are like big saucepans! It’s a delicacy that we want to share, to give people pleasure and emotion…”.
Laurence Ployez.
Laurence returned to the estate in September 1988, for the harvest, and continued her training in the winery thereafter. She began an apprenticeship alongside her father, who was a great believer in passing on his knowledge.
“I love fruity wines, with clean aromas, expressing a natural balance between minerality and acidity, so that they remain vibrant. However, discretion is my preference, because for me, wine is a personal experience, which should provide subjective pleasure before being descriptive…”. Laurence.
